BAKED COCONUT CAKE

Ingredients

• 3 eggs

 

• 3 tbsp butter, softened

 

• 200 g desiccated coconut

 

• 398 g condensed milk (1 tin)

 

• 240 ml milk

Method

Crack the eggs into a mixing bowl and whisk together with the milk and softened butter. Then whisk in the desiccated coconut.

 

Whisk in an entire tin of condensed milk. Pour the contents into an ovenproof baking dish.

 

Bake the cake at 180 degrees C for 40 minutes, until golden on top and set right through. Test with a clean skewer or fork... it should come out clean.
